Meat Ball Sandwich

Ingredients

• 1 - pound ground Ostrich Meat
• 3 - ounces grated Parmesan Cheese
• 2 - tablespoons chopped Parsley
• 1/3 - medium Onion, finely chopped
• 3 - cloves Garlic, minced
• 2/3 - cup Bread Crumbs
• 1 - teaspoon dried Basil
• 2 - slices White Bread, cut in 1/2 inch cubes
• 1 - Egg
• Salt and Pepper

Marinara Sauce Ingredients

• 1/3 - cup diced Onion
• 1 - quart Tomato Juice
• 1 - 16 ounce can diced Tomatoes
• 1 - 6 ounce can Tomato Paste
• 1/2 - teaspoon minced Garlic
• 1 - Bay Leaf
• 1/2 - teaspoon dried Oregano
• 3/4 - teaspoon dried Basil
• 1 1/2 - tablespoons Sugar

Directions

Sautée onion and garlic over low heat until tender. Add all other marinara ingredients into a pot. Simmer over a low heat for approximately 2 hours. For the meatballs, mix all ingredients well and form mixture into 2 inch balls. Brown in a skillet over medium heat in 3 tablespoons of olive oil.
