You can cook ostrich like you do any type of beef, but...

please do not overcook it!

Since ostrich has little or no fat to it, it will tend to cook quicker than beef and will turn tough if overcooked. A medium doneness is recommended, or even medium rare. If you overcook it you will actually make a jerky out of it.

Tips and Hints

  • Coat meat cuts with olive oil to help lock in the juices.

  • Sear coated meat on high heat to further seal in the juices. Turn the heat down after searing.

  • Cook to a medium doneness. Since there is so little fat, overcooking will result in toughness.

  • Coat pans or grill with non-stick cooking spray to keep meat from sticking.

  • Anything you can do with beef, you can do with ostrich. Try experimenting with different types of seasonings and spices. Share with others by sending us your best recipes.
